    Ginger thrives in Northeast India, Karnataka, Kerala, and Maharashtra. It prefers warm humid climates, rich loamy soils, and consistent rainfall. Aromatic ginger oil is obtained from steam distillation or CO2 extraction of dried rhizomes. It is used in flavourings, pharmaceutical applications, confectionery, beverages, perfumery, and aromatherapy.

    Until fresh ginger stock arrives in December, supply of dry ginger will remain tight. The availability of premium grade ginger is limited because of high moisture levels, crop disease, and frequent natural calamities. With strong demand from the global and domestic market, the price for ginger has firmed. Though farmers are enthused with the sharp surge in raw ginger prices. With the improving market sentiment they have increased sowing in the hopes of better returns. Fresh arrivals will ease pressure on the market. Though in the short-term strong prices are expected to stay with the tight demand-supply dynamics.
